Masakan Minang iolah sadoalah macam masakan nan barasa dari kawasan Minangkabau, khususnyo Sumatera Barat. Masakan ko dikenal sacaro laweh sabagai masakan Padang.[1][2] Asalinyo ragam masakan tasabuik indak hanyo dari Padang, tapi juo Bukiktinggi, Pariaman, Solok, Payokumbuah, dan daerah Minang lainnyo nan alah tanamo kayo jo masakannyo.

Sacaro umum, masakan Minang maolah samba jo mamakai banyak lado, bumbu, jo santan, inggo manjadi babagai macam masakan gulai nan bakuah pakek jo padeh.[1][3] Hidangan nan alah tanamo lainnyo antaro lain dendeng, randang, soto padang, pangek, dan lain-lain.[1] Biasonyo masakan ko disajikan basamo nasi putiah angek jo sambalado sebagai palamak makan.[4]

Ado duo caro panyajian masakan Minang. Caro partamo dipasan lansuang sasuai nan dimintak dan caro kaduo diidangan lansuang sagalo jinih masakannyo. Palayan biasonyo manantiang banyak piriang nan barisi baragam samba dalam sakali jalan lalu diidangan di ateh meja salapeh palanggan duduak. Palanggan buliah maambiak apo sajo nan diidang dan anyo mambayia sasuai apo nan dimakan. Caro kaduo ko manjadi ciri khas panyajian masakan Minang.[5]

Masakan Minang manjadi tanamo dan katuju dek masyarakaik laweh dek adonyo "Rumah Makan Padang" nan manggalehnyo. Rumah makan ko alah mudah ditamui di babagai kota di Indonesia, bahkan sampai ka lua nagari.[1][6] Manuruik data Ikatan Warung Padang Indonesia (Iwapin), di Jakarta dan sakitarnyo sajo alah ado labiah dari 20.000 restoran atau kadai nasi Minang.[7]

Etimologi

Istilah "Masakan Padang" labiah umum dipakai di Indonesia dan nagara tetangga untuak marujuak pado saluruah jinih makanan tradisi Minangkabau, khususnya nan barasa dari Sumatera Barat. Namun, istilah ko surang jarang dipakai di Ranah Minang tu surang, sarupo di Bukittinggi — pusek kuliner di Sumatera Barat dimano labiah katuju untuak manyabuiknyo sabagai Masakan Minang. Iko dek karano banyak nagari di Minangkabau punyo kabanggaannyo kapado warisan kulinernyo, dan sacaro teknis pun ado pabedaan pulo antaro Nasi Padang jo Nasi Kapau nan dari Agam walau samo-samo masakan Minang.

Rumah Makan Padang

Caro maidang masakan Minang di Restoran Sederhana; sadoalah piriang samba ditampilkan di hadapan palanggan. Palanggan cukuik mambayia dari apo nan dimakan.

Di rumah makan atau restoran Padang, biasonyo makan lansuang jo ciek tangan. Basuah tangan atau kobokan, sabuah mangkuak ketek barisi aia jo potongan limau nipih untuak pangarum tangan, diagiah ka palanggan sabalun makan. Aia ko bafungsi untuak mambasuah tangan sabalun atau sasudah makan, buliah pulo mamintak sanduak atau garpu.

The cuisine is usually cooked once per day. To have Nasi Padang in restaurants customers choose from those dishes, which are left on display in high-stacked plates in the windows. During a dine-in hidang (serve) style Padang restaurant, after the customers are seated, they do not have to order. The waiter immediately serves the dishes directly to the table, and the table will quickly be set with dozens of small dishes filled with highly flavored foods such as beef rendang, curried fish, stewed greens, chili eggplant, curried beef liver, tripe, intestines, or foot tendons, fried beef lung, fried chicken, and of course, sambal, the spicy sauces ubiquitous at Indonesian tables. Customers take — and pay for — only what they want from this array.[8] The best known Padang dish is rendang, a spicy meat stew. Soto Padang (crispy beef in spicy soup) is local residents' breakfast favorite, meanwhile sate (beef satay in curry sauce served with ketupat) is a treat in the evening.

The serving style is different in Nasi Kapau food stalls, a Minangkabau Bukittinggi style. After the customer is seated, he or she is asked which dishes they desire. The chosen dishes will be put directly upon the steamed rice or in separate small plates.

There are myriad Padang food establishments throughout Indonesia and the region, according to Ikatan Warung Padang Indonesia (Iwapin) or Warung Padang Bonds. In greater Jakarta alone there are at least 20,000 Padang restaurant establishments.[9] Several notable Minangkabau restaurant chains are Sederhana, Garuda, Pagi Sore, Simpang Raya, Sari Ratu, Sari Minang, Salero Bagindo and Natrabu.
